When we moved in there was already under cabinet lighting installed but you had to climb into the back of the cabinets to plug it in and unplug it to turn them on. So we bought a remote control light switch. We wanted to know if this was safe?

Can’t really say if it’s safe or not, but it’s not done correctly and is not up to code. The splices is one thing that would concern me, all splices should be done with wire nuts and enclosed in a approved electrical box.
